If you need to create another new document just go to File > New and it will be created and automatically named Untitled2 you can repeat this as many times you like ad infinitum.

So, this is a blank document you can just start entering text and you can also format this text using the tools you can see on the toolbars. You can start applying some format like bold, italics, underline, font color and different types of alignment as you can see in the next screen capture.

The way of doing this is by first selecting the text with your mouse or using the keyboard (Shift + left/right/up/down arrows) and then clicking on the icon of the tool you want to use for the next example I used Bold.
